Ingredients

1 cup

Mustard oil

2 tbsp

Hing

4, peeled and cut into small pieces

Raw mangoes

1/4 cup

Salt

2 tsp

Turmeric powder

2 tbsp

Red chilli powder

2 tsp

Fenugreek seeds

2 tsp

Fennel seeds

1 tsp

Nigella seeds

2 tsp

Mustard seeds

Approximate Cooking Time: 1 Hour

Step 1

  • Heat mustard oil until smoking; cool to room temperature.
  • Combine mango pieces with salt and turmeric powder in a mixing bowl; let it sit for an hour.
  • Dry roast fenugreek, fennel, and mustard seeds separately; cool and coarsely grind together.

Step 2

  • Add ground spices, nigella seeds, and red chilli powder to the mango mixture.
  • Pour the cooled mustard oil over the mango mixture; mix well.
  • Heat a little oil in a small pan; add hing, and cook until it releases its aromatic fragrance. Add it to the mango mixture.

Step 3

  • Transfer to a sterilized jar; cover with a clean cloth and let it sit for a week. Make sure to stir it daily.
  • Store in an airtight container after a week.
