Step 1
Drain the tofu and pat it dry with a paper towel. Crumble the tofu into small pieces with your hands or a fork, mimicking the texture of scrambled eggs.
In a large skillet, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until aromatic.
In the skillet, add the hing, finely chopped green chillies, grated ginger, and minced garlic. Sauté for about 1 minute until fragrant.

Add the finely chopped onion to the skillet and sauté until translucent. Then, add the chopped tomato and bell pepper, cooking until the vegetables are soft, about 3–4 minutes.
Season with salt to taste. Cook the tofu scramble for about 5–7 minutes, stirring occasionally, until the tofu becomes heated through and slightly browned.
Stir in the chopped fresh coriander leaves and a tablespoon of lemon juice. Mix well to combine all the flavours.
