Step 1

  • Drain the tofu and pat it dry with a paper towel. Crumble the tofu into small pieces with your hands or a fork, mimicking the texture of scrambled eggs.
  • In a large skillet, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until aromatic.
  • In the skillet, add the hing, finely chopped green chillies, grated ginger, and minced garlic. Sauté for about 1 minute until fragrant.

Step 2

  • Add the finely chopped onion to the skillet and sauté until translucent. Then, add the chopped tomato and bell pepper, cooking until the vegetables are soft, about 3–4 minutes.
  • Season with salt to taste. Cook the tofu scramble for about 5–7 minutes, stirring occasionally, until the tofu becomes heated through and slightly browned.
  • Stir in the chopped fresh coriander leaves and a tablespoon of lemon juice. Mix well to combine all the flavours.
